Papaya Banana Bread with Dried Figs

SERVINGS: 12

INGREDIENTS

* 2 cups flour
* 1 teaspoon baking soda
* 1/2 cup butter
* 1 cup brown sugar
* 2 eggs
* 2 cups ripe banana (mashed)
* 1 cup ripe papaya (mashed)
* 1/2 cup dried figs (chopped)

DIRECTIONS

1. Preheat the oven at 350F. Lightly grease a loaf pan.

2. In a large bowl, mix the flour and baking soda.

3. In another large bowl, cream together the butter and brown sugar. Stir in the eggs, mashed banana, mashed papaya and stir really well.

4. Add the dry ingredients into the wet ingredients and mix well. Add in the chopped figs.

5. Pour the mixture into your prepared loaf pan and bake at 350F for around 1 hour. Check the loaf is done by inserting a toothpick into the center of the loaf. If it comes out clean the loaf is done.

6. Allow the loaf to cool in the loaf pan for about 10 minutes before removing and placing on a wire rack to cool.

TIPS: If you don’t like papaya you can just add an extra 1/2 cup of mashed banana. Also, instead of using dried figs you can substitute 1/2 cup of any other dried fruit or perhaps some of your favorite nuts.

Experiment: Ginger Kiwi Banana Bread



The latest recipe on the Banana Bread Recipe Blog was a bit of an experiment which I think turned out quite well...

Ginger Kiwi Banana Bread!!!

The flavor combination of banana and kiwi is a little unusual and the ginger and lime juice gives it a little kick, but I really liked the final result.

I wouldn't recommend this recipe to everyone, but if you're looking for something new to try and are feeling a little bit adventurous then give it a try and let me know how you get on!

Low Fat Banana Bread



This recipe for low fat banana bread by chrisbarr looks delicious!

INGREDIENTS

* 1 cup sugar
* 1/2 cup unsweetened applesauce (or 1/2 cup shortening if you like)
* 1 well beaten egg
* 3 bananas (mashed - over-ripe are best)
* 3 Tbsp. milk
* 1 Tsp. Baking Soda
* 1 Tsp. Baking Powder
* pinch of salt
* 2 Cups flour
* 1/2 cup chocolate chips (optional)

DIRECTIONS

1. Preheat over to 350ยบ F

2. Cream sugar & applesauce (or shortening)

3. Add egg and bananas

4. Add all other ingredients

5. Bake in greased loaf pan for 55 minutes (45 if you use shortening)

Chris says, "I got this recipe from my mom, but I've since replaced shortening for Applesauce and added the chocolate chips".

Good move adding the chocolate chips Chris! :)

Strawberry & Cream Banana Bread Recipe



Strawberries and cream are delicious but so is banana bread... So why not combine the two!!!

This recipe combines two of my favorite fruits, banana and strawberries along with sour cream to make a heavenly banana bread that tastes soooo good!

You can also add walnuts or pecans (or any other nut you may like) if you like.
