Dave's Awesome Bourbon Banana Nut Bread

This recipe from VegWeb for Bourbon Banana Nut Bread sounds fantastic. I look forward to giving it a try!

Ingredients (use vegan versions):

1/2 cup vegan margarine
1/2 cup sugar
2/3 cup brown sugar
substitute for 2 eggs
3 ripe bananas
2 cups flour
1/2 teaspoon salt
3/4 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon vanilla extract
1/2 cup bourbon whisky
1 tablespoon lemon zest
1 1/2 teaspoon cinnamon
1/2 cup chopped nuts

Directions:

Cream the margarine, sugar and bananas first. Then add all other ingredients EXCEPT NUTS and mix until it becomes a batter. Now fold in the nuts, pour into greased loaf pans and bake at 350 F:

For two medium loaves, bake for 45 minutes For making one big loaf, bake for one hour. When done, a fork or toothpick inserted in the center will come out clean.

I created this recipe over a year ago. I thought bourbon would be a perfect flavor to add to banana bread, but I couldn't find a recipe that sounded like what I had in mind. I made the mistake of bringing this in to work once, now people keep asking me to make it again and again.

Serves: 2 med or 1 lg loaf

Preparation time: less than 10 min
