This recipe for
Healthy Banana Bread from Marie-Ève in Toronto, Canada sure looks delicious!
Ingredients* 2 cups and a half of whole wheat pastry flour
* 1 teaspoon baking soda
* 1 teaspoon salt
* 1 teaspoon vanilla extract
* 1 and 3/4 cups of mashed bananas (approximately 4 bananas)
* 2 eggs
* Half a cup of buttermilk
* 3/4 cup of honey (or less)
* 1/2 cup of butter, melted
* 1 cup of chopped nuts (I prefer pecans, but walnuts are also good)
Directions1. Preheat oven at 350 degree F. Combine the melted butter and honey in large bowl. Whisk in the eggs. Add the mashed bananas, the buttermilk and the vanilla. Add the dry ingredients until just combined. Mix in the nuts.
2. Pour the mixture into a greased 9x5 loaf pan, or two 8x4 loaf pans. Bake in the oven for 1 hour and 15 minutes if using the 9x5 loaf pan, and approximately 45-50 minutes if using the 8x4 loaf pans.
